Zucchini Omelet

Here's a healthy way to use all that zucchini that's been growing in your garden all summer. First cut into 1/2 inch pieces a large zucchini. Then steam it until the zucchini is well-cooked and tender. Heat up a Teflon frying pan sprayed with non-fat cooking spray. Beat 1, 2, or 3 eggs with a fork. One or two of the eggs could be just egg whites if you desire. When the pan is very hot, pour the eggs in the pan. They should immediately start to sizzle. Tip the pan back and forth to distribute all the eggs along the bottom of the pan. Salt and pepper to taste. The pour the steamed zucchini on to half of the egg in the pan. With a spatula, fold over the the half of the egg. Cook a little longer and then serve. You don't need any other ingredients and it is very delicious!

This week, we both lost one pound. Rhonda is at 218 pounds and I am at my lowest weight of the year, 214 pounds. Actually my lowest in over 23 years. We also measured ourselves. We haven't done that since the first Friday in July. I gained a half inch on my belly button measurement, although, I'm not sure my measurement was right back then. Rhonda, however, did her's right in July and this week. She lost an inch off the bust, waist, and one and a half inches off the hips.
